We were introduced to the delightful pairing of mortadella and pistachio at a sandwich shop in Florence. No surprise, we have found this combination works just as well on top of a pizza.
With a few simple ingredients, this pizza is quick to assemble.
Mortadella and Pistachio Pesto Pizza

Ingredients
Arugula (massaged with some extra virgin olive oil, and salt and pepper)
A few slices of mortadella
Pistachio pesto (recipe here)
Your favourite cheese, shredded (we used a mix of smoked gouda and havarti)
Directions
- After prepping your pizza dough (recipe here), top with a thin layer of pistachio pesto and a generous handful of cheese.
- Cook in a 800 °F oven for 30-60s.
- Once your crust is out of the oven, top with a layer of mortadella and arugula.
